Recipe for two

Ingredients

250g Tofu

200g shiitake mushroom (or mushroom of choice)

1-2 Pak Choi (depending on size)

2 noodle nests (I liked medium noodles for this one!)

3 garlic cloves

1 tsp ginger

3 tbsp miso paste

3 tbsp soy sauce

2tbsp sesame oil

1 tbsp mirin

850ml vegetable stock

Optional: 1-2 tbsp umami seasoning for extra flavour and spring onion

Method

Step 1

Grab a saucepan. Boil a kettle. Cook your noodles as per packet instructions and drain. Leave until serving.

Step 2

Whilst your noodles are cooking, finely slice your mushrooms. Finely mince the garlic until fine. Finely chop your ginger.

Step 3

Grab a frying pan and heat 1tbsp of olive oil on a medium high heat. Crumble in your tofu and add your shiitake mushrooms. Cook until crisp then add 1/3 of the garlic to the pan. Cook for one minute then add a splash of sesame oil and soy sauce and cook for another minute. Set aside until serving.

Step 4

In the noodle saucepan, add 1tbsp sesame oil. Once hot add the remaining garlic and ginger and cook until fragrant (around 1-2 minutes). Add your 3 tbsp miso paste, 2 tbsp of soy sauce and 1tbsp mirin and whisk until combined. Add in the vegetable stock (and umami seasoning if using) and whisk until combined. Leave to simmer for 5-10 minutes.

Step 5

Finely slice your Pak Choi and spring onion (if using). After the broth has had an initial 5-10 minutes, add the Pak Choi and cook until softened.

Step 6

Assemble your ramen! Put the noodles in your bowl and ladle on the broth with pak Choi until covered. Spoon on your tofu and mushroom mix and sprinkle over your spring onions and voila! Your very own veggie ramen bowl!

I hope you enjoy it as much as I do!
