Lazy Day Creamy Garlic Pasta

This is one of my favourite dishes to make when I’m feeling a little lazy but still want something comforting. It comes together in just 20 minutes with ingredients I nearly always have at home — the perfect easy pasta. Creamy and garlicky, it truly is comfort in a bowl and has quickly become my boyfriend’s most-requested meal. I swap the usual cream for natural yoghurt, which adds a lovely tang and keeps it a touch lighter while still feeling indulgent.

This dish pairs perfectly with my golden garlic bread.

Ingredients

200g pasta (any shape works but I like tortiglioni)

1 large shallot

3 garlic cloves

30g tomato paste

40g parmesan

2 large spoonfuls natural yoghurt

Salt and Pepper to taste

Method

Recipe for 2 people

Step 1

Heat a large glug of olive oil into a frying pan on medium heat. Finely chop your shallot and garlic. I recommend combining them and chopping over to make them as small as possible. Add the shallot and garlic with a large pinch of salt into the pan once hot.

Step 2

Put your pasta on to cook as per packet instructions in salted boiling water.

Step 3

Once the shallot and garlic have had about 8-10 minutes and are nice and soft. Add your tomato paste and cook for a further 3-5 minutes.

Step 4

Add a generous amount of the salted pasta water into the pan to turn it into a saucy consistency. Once saucy, add your natural yoghurt and warm through.

Step 5

Take sauce off the heat and add most of your parmesan (save some to top with!). Then add your pasta and mix to combine.

Step 6

Serve pasta in bowls and top with the parmesan for a tasty bowl of pasta!
