Recipe for 1:
Ingredients
3 Eggs
60g Cherry Tomatoes
75g Feta
80g Spinach
15g Chives
1 Splash of Milk
Method
Step 1
Pre-heat the oven to 180 Fan.
Boil a full kettle.
Oil a small baking dish.
Step 2
Add the spinach to a colander and pour the boiling water over so it wilts. Run under cold water and then squeeze as much liquid out as you can.
Chop the spinach finely. Chop the chives finely. Chop cherry tomatoes in half.
Step 3
Whisk 3 eggs with splash of milk. Add the chopped chives, spinach, cherry tomatoes, and crumble in the feta.
Stir together, add a pinch of salt and pepper.
Step 4
Add egg mixture into the oiled baking dish and cook 18-25 minutes until egg is cooked through.
Step 5
Serve in the dish with some bread!
