Burrata and Peach Salad

Here’s another dish inspired by my travels! In September 2023, I visited Copenhagen with my mum, and we were completely blown away by the food scene there. One of our favourite spots was the brasserie at our hotel — Villa Hotel. The food was incredible, but what really caught my eye (and perhaps tested my mum’s patience!) was the open kitchen. I was completely mesmerised by the chefs cooking and preparing each dish at the different stations – I could have stood there all evening!

During our stay, I ordered this particular salad three times — it was that good. Simple, fresh, and packed with flavour. As soon as I got back home, I knew I had to recreate it in my own kitchen — and now I’m so excited to share it with you!

Ingredients

Perfect for 2 people as a light dish or for one as a bigger meal.

1 Burrata

2 Nectarines/Peaches (I sometimes use tinned peaches if they’re not in season!)

250g Lettuce of choice (I used radicchio, gem and endive in the picture but also love it with butterhead lettuce)

Olive Oil

Salt/Pepper

Honey (optional)

Method

Step 1

If using canned peaches you can skip this step.

Boil the kettle. Whilst boiling, score the skin of the peach/nectarine all the way around (as if cutting it half but not cutting the flesh). Add your peaches to a heatproof bowl and then cover them with the boiling water. Let them sit for around 5 mins enough for the skin to soften.

After around 5 minutes, pour the boiling water out and peel the skin off the peaches – they should come off easily (be careful they will be hot!).

Step 2

Remove the pit from the peaches (if using fresh), then chop them into small 1 cm chunks.

Step 3

Add the chopped peaches to the a small saucepan with a splash of water. Let cook down into thick jam like consistency. If using fresh peaches, they might not be very sweet so you can add a dollop of honey/some sugar – season to taste.

Step 4

Whilst your peaches are cooking, wash and dry your lettuce leaves. Pop them into a large bowl and drizzle with some olive oil and a good pinch of salt. Mix all together.

Step 5

Once turned into a jam like consistency, I usually let the peach mixture cool a bit.

Step 6

Assemble your salad! Cut your burrata in half and add to your plate. Dollop half your peach mixture on top, add black pepper, and surround with lettuce leaves.

Enjoy the creaminess of burrata paired with the sweet juiciness of the peaches and the fresh, crisp crunch of lettuce — a perfect balance of flavours and textures in every bite and the perfect recipe for a hot summers day!
